Smoked Chicken Thighs Recipe

Ingredients
Boneless skinless chicken thighs (2lbs), extra virgin olive oil (1/4c), cider vinegar (1/2c), chopped shallots (1/4c about 2 medium), chopped garlic (2cloves), kosher salt (3/4tsp) and one smoking pouch (see below).

Method of preparation:-

Cover the bowl and keep it in the refrigerator to marinate for about 20 minutes or 3 hours. Make the smoking pouch, take a bowl and soak a cup of wood chips in water in the bowl. Take out the chips and drain the water and then put the chips in the piece of aluminium foil. Fold the foil and make the packet of it. Make the holes in the top of packets. Heat the grill and the place the packets in grill and then grill it until get smoking. Now place the chicken to the grill and drain the excess marinade into the bowl. Throw out the remaining marinade. Grill the chicken for about 6 to 8 minutes on each side until it gets cooked. Turn its sides once during cooking.

Fruit Salsa and Cinnamon Chips

INGREDIENTS

* 2 kiwis, peeled and diced
* 2 Golden Delicious apples - peeled, cored and diced
* 8 ounces raspberries
* 1 pound strawberries
* 2 tablespoons white sugar
* 1 tablespoon brown sugar
* 3 tablespoons fruit preserves, any flavor

* butter flavored cooking spray
* 2 cups cinnamon sugar

DIRECTIONS

1. In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
2. Preheat oven to 350 degrees F (175 degrees C).
3. Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
4. Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

Chocolate Espresso Torte

5 oz. semisweet chocolate, chopped
3 oz. unsweetened chocolate, chopped
1/4 lb. (8 Tbs.) unsalted butter, cut into pieces plus more for the pan
4 eggs, at room temperature
1/2 cup sugar
1/4 cup brewed espresso or double-strength coffee, cooled to room temperature
1 Tbs. sifted, finely ground espresso beans (from about 1 heaping Tbs. whole beans)
1/4 tsp. salt
1/4 cup all-purpose flour plus more for the pan

Heat the oven to 350 F. Butter an 8-inch cake pan and line the bottom with Pan Liners (parchment). Butter the parchment and lightly flour the pan, shaking out the excess.

In a small, heavy-based saucepan over medium heat, melt the chocolates and butter, stirring frequently. Set aside.

Using the whisk attachment of a stand mixer, whip the eggs, sugar, brewed espresso, ground espresso beans, and salt on medium-high speed until thick and voluminous, at least 8 min. Turn the mixer to low and mix in the butter-chocolate mixture. Turn off the mixer. Sift the flour over the batter and fold until all the ingredients are fully incorporated.

Pour the batter into the prepared pan and bake until a skewer inserted in the center of the cake comes out clean, 25 to 30 min. Cool in the pan on a rack for 10 min. Set a plate over the torte and carefully invert the torte onto the plate; peel off the parchment. Flip the torte back onto the rack to cool completely before slicing.

2. Chicken breasts (2 pounds boneless, skinless, 1/2-inch thick slices)
3. Scallions (8-12)
4. Wooden picks
5. Sodium soy sauce (1/4 ¼ cup reduced)
6. Honey (1 tbsp)
7. Dark sesame seeds oil ( 2 tsp)
8. Ginger ( 1 tsp)
9. Sesame seeds ( ¼ tsp , to garnish)

Method Of Preparation:-

Coat the stove-top grill pan or an outdoor grill with the cooking spray and preheat to medium- high heat. Now lay out the three chicken strips of about ½ inch apart. Now place the scallion over the chicken one by one, with the help of tooth picks. Repeat the process until you have used 1 pound of chicken. Now season and grill the remaining one pound of chicken breasts by repeating the same process. Now in a small bowl, mix the honey, soy sauce, ginger, sesame oil and garlic powder and whisk them. Reserve the half cup of marinade for the sauce. Brush the remaining of the marinade over the kebabs. And grill them for 5-7 minutes turning them occasionally until the chicken is cooked properly. Serve it with garnishing with sesame seeds and dipping sauce.

Ingredients:

1.Chicken thighs (6 boneless, skinless)
2.Chicken broth (1/2 cup)
3.Olive oil (2 tbsp)
4.Onion(1 medium sized and finely chopped)
5.Chopped green chilies (1 7 oz can)
6.Mexican blend shredded cheese (2 cups)
7.Tortillas (8 flour)
8.Cumin (1 tbsp)
9.Chili powder (1 tbsp)
10.Cayenne pepper (1/4 tsp)
11.Salt
12.Pepper

Method Of Preparation:-

Take chicken and wash it thoroughly. Now cut the chicken into ½ inch cubes. Now heat olive oil in a pan and sauté chicken, onions and salt and pepper according to your taste. Cook chicken with continuously stirring for about 10 minutes or until the chicken is done. Now add chili powder, cumin, chilies, chicken broth, and cayenne pepper and mix well. Now boil it over the medium heat and the reduce the heat to simmer. Cook until all the liquid evaporates. Remove from heat and let it cool. Now heat the large frying pan over a medium heat and place tortilla flat on a cutting board. Now spread a thin layer of cheese on the tortilla and then a layer of chicken mixture and again a layer of cheese. Take care that each layer should be about ¼ inch thick not more than that. Now place another tortilla on the top. Now carefully place it from the board to the frypan, check it frequently and when your quesadilla is light brown from bottom, turn it. Serve with your choice of salsa, sour cream and guacamole.

Heat oven to 500 degrees F. Spread cut sides of hamburgers buns or one


side of each bread slice with mustard. Mix meat, onion, salt and pepper.
Spread mixture over the mustard, being careful to bring it to the edges of
the buns. Place meat sides up on an ungreased baking sheet. Bake until
desired doneness is reached, about 5 minutes. NOTE: If you like, you can
have these burgers ready and waiting in the freezer for last-minute
cooking. After spreading the meat mixture over the buns, wrap each
securely in heavy-duty or double thickness of regular aluminum foil and
label; freeze no longer than 2 months. To serve, unwrap desired number of
hamburgers and bake about 10 minutes.
