Mexi Chicken Quesadillas

Mexi Chicken quesadillas are a real treat and can be either served as an appetizer or as a main dish.

Ingredients:

1.Chicken thighs (6 boneless, skinless)
2.Chicken broth (1/2 cup)
3.Olive oil (2 tbsp)
4.Onion(1 medium sized and finely chopped)
5.Chopped green chilies (1 7 oz can)
6.Mexican blend shredded cheese (2 cups)
7.Tortillas (8 flour)
8.Cumin (1 tbsp)
9.Chili powder (1 tbsp)
10.Cayenne pepper (1/4 tsp)
11.Salt
12.Pepper

Method Of Preparation:-

Take chicken and wash it thoroughly. Now cut the chicken into ½ inch cubes. Now heat olive oil in a pan and sauté chicken, onions and salt and pepper according to your taste. Cook chicken with continuously stirring for about 10 minutes or until the chicken is done. Now add chili powder, cumin, chilies, chicken broth, and cayenne pepper and mix well. Now boil it over the medium heat and the reduce the heat to simmer. Cook until all the liquid evaporates. Remove from heat and let it cool. Now heat the large frying pan over a medium heat and place tortilla flat on a cutting board. Now spread a thin layer of cheese on the tortilla and then a layer of chicken mixture and again a layer of cheese. Take care that each layer should be about ¼ inch thick not more than that. Now place another tortilla on the top. Now carefully place it from the board to the frypan, check it frequently and when your quesadilla is light brown from bottom, turn it. Serve with your choice of salsa, sour cream and guacamole.
